Adding a Twist to the Dish! Recipe: Fried Shrimp and Crab Grits


Fried scrimp and crab grits. Yess sir, this was one of my favorite. I make shrimp and grits at least three times every month for myself, and at least every other event I cater for. So changing it up and being creative was necessary.

A huge part of the beauty in cooking is when you put your own spin on it. What do you like? What are your favorite foods and how can you bring these together?

I'm a sucker for corn. You can try to put corn in a dessert for me and I'll find a way to enjoy it. I always incorporate it in my grits, but I wanted MORE.

I love, love, love seafood and grits together. Rather than salmon, I wanted something that can mix in the grits. I boiled crab legs and removed the meat from the shell. (You can just use lump crab meat but I was on a mean budget).

I added that with freshly grated parmesan cheese, a dab of heavy cream, and laid these under some golden fried shrimp.

I toasted a full corn on the cob in a hot skillet to develop a nice char. After plating, I used microgreens for a vibrant, fun, yet classy garnish for presentation.
